Can I buy the 800W System for a 125 gallon tank?

Great question! you can absolutely use that heater on a 125gal tank. Being rated higher than your tank, it can more quickly heat your tank with less overall ON time, which equates to efficiency. :-)

Will I need a heater to compensate for my sump as well or just my 75 gal tank ( I have a 55gal sump for my 75gal tank)

Great question! You will want to size your heater for the total water volume in the tank. Although you have a 75gal tank and 55gal sump, your sump is not completely full and your display is less than 75gal because of the displacement. After all of that, I would guess your total water volume is around 80-90gal. :-)
